PHYS Propri\u00e9t\u00e9 qu\u2019a tout fluide d\u2019opposer une r\u00e9sistance aux forces qui tendent \u00e0 d\u00e9placer les unes par rapport aux autres les particules qui le constituent.&nbsp; <em>Source : \u00a9 Hachette Livre, 1997<\/em><\/p>\n\n\n\n<p>Isaac Newton fut le premier \u00e0 \u00e9tablir la loi fondamentale de la viscosim\u00e9trie d\u00e9crivant le comportement de l\u2019\u00e9coulement d\u2019un liquide id\u00e9al.<\/p>\n\n\n\n<p><span style=\"color: #808080;\">\u03c4 = \u03b7.D o\u00f9 \u03c4 = contrainte tangentielle (N\/m\u00b2) et D ou g = gradient de vitesse (n-1)<\/span><\/p>\n\n\n\n<p>La solution de cette \u00e9quation pour la viscosit\u00e9 dynamique donne : \u03b7 = \u03c4\/D en Pa.s<\/p>\n\n\n\n<p><strong>A noter :<\/strong> dans le syst\u00e8me SI, l&#8217;unit\u00e9 est le Pascal.seconde (Pa.s) ou encore le milliPascal.seconde (mPa.s). En milieu industriel nous trouvons d&#8217;autres unit\u00e9s dont les plus utilis\u00e9es sont la centipoise (cP) et la poise (P) :<\/p>\n\n\n\n\n\n<ul>\n<li>1 Pa.s = 1 000 mPa.s<\/li>\n\n\n\n<li>1 mPa.s = 1 cP<\/li>\n\n\n\n<li>1 P = 100 cP<\/li>\n<\/ul>\n\n\n\n<p>Valeurs typiques de viscosit\u00e9 \u00e0 20 \u00b0C (mPa.s) :<\/p>\n\n\n\n<ul>\n<li>Ac\u00e9tone : 0,32<\/li>\n\n\n\n<li>Eau : 1<\/li>\n\n\n\n<li>Mercure : 1,5<\/li>\n\n\n\n<li>Jus de pamplemousse : 2~5<\/li>\n\n\n\n<li>Sang (\u00e0 37\u00b0C) : 4~15<\/li>\n\n\n\n<li>Caf\u00e9 cr\u00e8me : 10<\/li>\n\n\n\n<li>Huile d&#8217;olive : 10<sup>2<\/sup><\/li>\n\n\n\n<li>Miel : 10<sup>4<\/sup><\/li>\n\n\n\n<li>Goudron : 10<sup>6<\/sup><\/li>\n\n\n\n<li>Bitume : 10<sup>8<\/sup><\/li>\n<\/ul>\n\n\n\n<p>Ainsi donc, la viscosit\u00e9 des liquides diminue lorsque la temp\u00e9rature augmente.<\/p>\n\n\n\n<p>Dans l&#8217;industrie, la viscosit\u00e9 a une tr\u00e8s grande importance pratique, car elle conditionne <strong>l\u2019\u00e9coulement des fluides<\/strong> dans les canalisations et le long des parois. Elle permet de mesurer directement ou indirectement certaines caract\u00e9ristiques des produits (<strong>texture<\/strong>, <strong>taille de polym\u00e8re<\/strong>&#8230;).
